Vegan 'BLT"


This is a great sandwich. Delicious, nutritious and filling. This recipe is for four sandwiches. So make some for a lovely summer picnic.


Soy Bacon, Basil and Tomato (plus Spinach) Sandwiches


12 slices soy bacon

8 slices whole wheat bread, toasted

3 tbsp soy mayonnaise

1/4 cup fresh basil leaves

1 large tomato, thinly sliced

Freshly ground black pepper, optional


Cook bacon strips according to package directions. Let cool slightly.

Spread the soy mayonnaise over each slice of bread. Top with one-quarter of the basil leaves and tomato slices. Place 3 strips of bacon over the tomatoes. Season with pepper to taste, if using. Repeat with remaining ingredients. (I also used baby spinach on mine for the added nutrition and to replace the lettuce in the traditional 'BLT'.


You can also chop the basil leaves and stir them into the mayonnaise, then spread them on the bread. You can use whole wheat pitas for a pocket sandwich on the go or for picnics.
