My Vegan Journey: Day 7~Cookbooks

I am so excited! I picked up two new cookbooks from our local independent bookstore. The first is The Voluptuous Vegan by Myra Kornfeld. Full of yummy, inspiring vegan recipes. The second is an oldie but goody, The Vegetarian Epicure, by Anna Thomas. Though it's been reprinted since, this is the 1972 edition. Some of you know of my passion for 1970's books, so this was a must have. Though not strictly vegan there are plenty of vegan dishes mixed in with the delicious vegetarian options. And I just adore the whimsical, hand drawn style of the illustrations. So fun to read and yummy. Vegan blessings.

One Day and counting.....

Well, it's almost here. That is, the beginning of my Vegan journey. I am getting excited. I got a new book from the local independent book store, full of recipes and tips. Though I am not beginning a vegan diet due to animal rights, though I do feel that the cruelty that is employed is horrendous. I got the book, Vegan Vittles, which was written with the creators of Farm Sanctuary. It has some great sounding recipes. I also found a couple of others I may go back and get, The Voluptuous Vegan and Vegan Express. I got a few from the local library too. I can't wait to begin trying out some of these yummy looking dishes. I will let you know what I discover and how it goes.

So here's what I'm thinking.....

...I am going to go vegan for the month of June and then see how it feels and how easily I can incorporate it into my already vegetarian lifestyle. I have already cut fresh eggs out of my diet and am having cheese only if it is already on something, such as pizza. However, I did try the vegan cheese and honestly I can't tell any difference in the american slices. I have yet to get milk, cheese, and eggs out of the ready made stuff, and due to the cost of buying the vegan stuff, I foresee much more home cooked meals for me. But I am ok with that, since the fruits and veggies are coming in season, it should be fairly easy. I found a couple of great websites to get myself started, and I have a vegan cookbook. So here I go..countdown to veganism....7 days to go.
