My Vegan Journey~Day 6: Vegan Menu Planning


I have made a vegan menu for the upcoming week and I am working on a shopping list. I know I need to do this in the beginning in order to keep myself on the right track. So here is what I have planned, these came out of the various vegan cookbooks that I have right now. These are for dinner, I will fill out the day with oatmeal, or my trusty Grape Nuts, (thanks Mare) with soymilk and fruit, and for lunches, Zesty Tofu spread on sandwiches, or Herbed Flatbread Chips with Hummus, filled in by salads and fresh fruit.


Monday~Golden Tofu Triangles with Rich Peanut Sauce


Tuesday~Polenta with Black Beans and Spinach


Wednesday~Veggie Kabobs and Garlic Mashed Potatoes


Thursday~White Pizza with Asparagus and Spinach


Friday~ Probably leftovers, I am sure I will have a lot.


For dessert~ Ultra Fudgey Brownies and Chocolate Cream Pie, in order to get my chocolate fix in vegan~like. Stay tuned for recipe reviews.....yummy!
