Garden Beauties



Since I hurt my hand it has been out of commission for the most part. I have been unable to do much of anything that requires the use of my hands. Typing is pretty slow going. I have been doing a lot of reading, and walking in the gardens. Here are some of the latest developments there.

Tomatoes ! Everywhere! They are ripening at breakneck speeds. I am planning Mari's Tomato Soup this evening. Here is the recipe, it's so worth the effort. Enjoy!

Mari's Tomato Soup

14-18 Big Tomatoes
1 cup cream
1 container sour cream
2 cups extra virgin olive oil
1 cup vinegar
2 tsp fresh basil
1 pinch fresh sage
2 tsp garlic
1 tsp oregano
Dice 4 of the tomatoes and soak in oil, vinegar and seasonings for 3-4 hours.
De-seed the rest of the tomatoes and cook until tender (they are done when you can mush them with the back of a spoon). Puree them until they form a paste.
Mix the paste with the cream and sour cream cook on low heat for around 45 minutes.
When the time is up on the soaking tomatoes, drain them and add to the tomato puree, add more basil to taste. Cook on low heat for an additional 25 minutes.
